Will plantains(small bananas) be a good alternative?

Im doing a chocolate fountain for my sisters bachelorette party. I already know what I will offer as dippers. But I have a banana issue. I dont want them to brown too early and there too huge to put on the table. Will plantains be a good alternative? I hear there a little more tart than the big ones.
